Garlic has long been popular for many reasons, from health benefits to simply flavoring food. More than just a delicious flavoring, it has also been associated with preventing cancer, diabetes, heart disease and infections. In the culinary world, roasting garlic is a favorite of many chef's palettes, but is a time consuming method for chefs and home users alike. Fortunately, those days are over with the Express Garlic Roaster. This unit roasts garlic in just 27 minutes, and makes use of an automatic shut off feature to prevent burning. The roaster uses a terra cotta clay piece, to cover the heating element, that provides even heating without direct contact. Simply fill the nonstick roasting cup with the desired number of garlic bulbs, along with one tablespoon of oil per bulb. Place the bulbs cut-side down, close the lid and power the machine on. Press the start button and the roasting cycle begins, automatically bringing it to the right temperature and amount of time. Unlike the other models, this stainless steel version has an adjustable digital timer, allowing the customization of roasting times. Cleaning is a snap due to the non-stick interior, and the roasting handle is completely detachable. In addition, the cord stores underneath the unit to keep countertops clean and storage a breeze.

This garlic roaster is almost perfect. The only issue I have is the 27 minute default, which I guess would be fine for small heads of garlic but for my first roasting I decided to follow the lead of others that have owned this unit and I increased the time to about 32 minutes, which was just right.
I used to use an 8" x 8" casserole dish with a layer of rock salt on the bottom, put in four heads and would cover them up with more rock salt then bake at 400 degrees for one hour.
That worked great but it was tedious and heated up the house.
Now I'll be roasting garlic every chance I get with this little gem AND I get the extra benefit of having garlic infused olive oil as a byproduct!
Clean up is a breeze because of the Teflon coated interior.
The only concern I have is the staying power of the Terracotta ring that sits beneath the roasting pan. If that breaks, I'll probably resort to using the rock salt again as a base for the pan.

Follow-up review: Item works great but one hazard that you need to be aware of is the steam/heat when you open the top. Directions state to let set for 2-3 mins for best results but when you open the top there's enough steam/heat to scorch/burn your thumb or bottom of your hand/wrist. Operator's manual states nothing about this. You need to use an oven mitt. In my opinion definite design flaw and I'm sure Todco will incorporate in their safeguards or change future designs. The front handle needs to be moved to the side or a handle/knob on top. Again the unit works great and produces restaurant quality roasted garlic but, just a caveat.

Bought this for my mother in law. She loves it! It is nice to have the option of changing the time (longer or less than the recommended time). No problem with burning yourself. I read that was a problem with the other model.
