Nesco's 18-quart roaster oven roasts, steams, poaches, and even bakes all varieties of meat, poultry, seafood, and vegetables. Its extra-high domed cover seals in moisture and assists in self-basting. Heat is controlled by a dial on the front and can be set according to temperature (150 to 450 degrees) or cooking style (slow cook, cook, roast, bake, or steam). Detailed directions and recipes for all types of cooking styles and foods are included. The cookwell removes for cleaning, and the smooth exterior can be wiped clean with a damp cloth or sponge. I bought a turkey thanksging 2003 and used my new 18 quart Nesco . My husband and I are not turkey lovers. My nesco roaster made my 17cents a pound turkey tender, moist, and flavorful with just paprika, salt, pepper, 1 cup oil and butter, and chopped onion, carrots, celery. Yum-Yum-yum. Iused the nesco 6 quart roaster to make soup, cooking slowly all night the bones and previously cooked chopped vegetables adding rest next day etc. I am a caretaker of 95 year old alzheimer patient with no teeth. She ate turkey without chopping it, because it was so tender and moist.

A nesco is a very good second oven. It is also very good for cooking your dinner outside (if you have an outlet) on a patio on a hot summer day. I did find mine easy to clean on the non-stick interior...a bit less so on the outside but still very cleanable. The issue I have is that is isnt really an excellent unit for crockpot cooking which is what i primarily wanted it for. It cooks a bit different, the timing is a bit different and the crockpot recipes dont exactly transfer. It took me a while to figure that out. You *can* use it as a crockpot but if you are buying it to use it primarily for that I would choose a crockpot instead. That said, it bakes, roasts very well. and keeps things warm (like pots of chile or soup etc) for a party excellently.

I go back to the time when Nesco Roasters were part of every large gathering and were on every buffet table.

However, we recently used it on a camp trip where we had to serve 35 people at lunch. We boiled up the hot dogs first. Then put each one in a bun and wrapped each one in foil. Put them all in the Nesco, set the control on warm and we were set for the rest of the day. This kept the buns soft and warm and seemed like we were at the ball park. The next morning, we did the same thing with the breakfast burritos. Able to make up a large batch and keep them warm until everyone was served.

Some of the younger people in the group were amazed as they had never heard of a Nesco roaster.
