Summary: Steaming is essentially how this works.... 2008-11-17
Comment: Purchased the roaster to cook a turkey at Thanksgiving to free up oven space. Baking off the chemical smell for 1 hour or so according to manufacturer's direction prior to using is necessary This unpleasant odor will be gone forever. Know that cooking anything in a roaster is essentially steaming your food therefore not the preferred way to roast anything. However,if you use a meat thermometer and cook until the turkey breast reads 155*, then REMOVE your turkey, loosely cover with foil watching the internal temperature rise to 165* it will come out fine. Gravy always helps! Though it is possible to overcook in an oven, too, it is very easy to do in the electric roaster. On the website www.ochef.com will give you some specific instructions about self-basting turkeys or not. They recommend smaller turkey's if it is a self-basting one, and watch the temperature as the self-basting turkeys have more moisture to steam a bit faster. All in all I am glad I purchased the unit as I needed some space to prepare an entire meal. I look forward to using other items in the roaster. One thing, though it does become hot enough on the outside surface to burn when touched, surprisingly it does not heat up the kitchen like an oven.... that is a plus now that I live in a southern climate and it can be 80* on Thanksgiving. My favorite way to cook a Thanksgiving turkey? Deep fried, of course. This year is was too cool to fry the turkey to keep the 3 gallons of oil at a high enough temperature to not have the oil absorbed so we opted for the roaster. Enjoy experimenting with this product! btw, shop around, I found the prices all over the place esp. around the holidays.

Comment: I couldn't do without this product especially on holidays. Very few people have enough ovens to handle all the roasting, baking and heating that goes on at that time. I cooked a large prime rib in mine at Christmas and a large turkey at Thanksgiving and it was a life saver. At other times I've put in pies to bake or casseroles to bake while my regular oven was available for other things.
